White Chicken Chili
Here is my white chicken chili recipe. My family and my neighbors love it. It's easy and comes together in less than an hours. You can easily make multiple recipes of this at once to feed a crowd.

Here's how I make my white chicken chili. It's southwestern flavors combine beautifully with chicken and white bean. So yummy.
Ingredients:
2 Tbs olive oil
1 ½ lbs. boneless, skinless chicken breast, cut into cubes (4 frozen breasts thawed)
½ onion
2 cups chicken broth
1 can (7oz) chopped green chilies
3 cans (14.5oz) white kidney beans (cannellini), undrained
Jack cheese, avocado, onion, cilantro for garnish
Spice Blend:
2 tsp garlic powder
2 tsp ground cumin
1 tsp oregano
1 tsp cilantro
1/8 tsp ground red pepper
Directions: Heat oil in dutch oven over medium-high heat. Add chicken and cook 4-5 minutes until cooked through.
Remove chicken.
Add onion to saucepan and cook until soft.
Stir in broth, green chilies and spices blend.
Simmer 30 minutes.
Stir in cooked chicken and beans.
Simmer 10 minutes.
Garnish with jack cheese, onion, cilantro, or avocado.
Serves 6. Or four if you're hungry.
